Delightful macarons infused with the comforting flavors of cinnamon rolls, featuring a creamy cinnamon buttercream filling.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 1/4 cup granulated sugar
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar (for frosting)
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar.
  3. Beat the egg whites with cream of tartar until soft peaks form.
  4. Gradually add the granulated sugar, continuing to beat until stiff peaks form.
  5. Fold the sifted dry ingredients into the egg whites gently.
  6. Pipe macarons onto the prepared baking sheet in equal-sized circles.
  7. Let them rest for 30 minutes.
  8. Bake for 15-20 minutes, or until the feet of the macarons have formed.
  9. Let the macarons cool completely before filling.
  10. Beat the softened butter with powdered sugar and milk until creamy for the frosting.
  11. Fill the macarons with frosting and sandwich them together.

Notes

Store leftover macarons in an airtight container in the refrigerator for up to five days or freeze for up to a month.
