Cinnamon Roll Macarons

Delicate macarons infused with the warm flavors of cinnamon and vanilla, filled with luxurious cream cheese frosting.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 1/4 cup granulated sugar
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar (for frosting)
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together 1 cup of almond flour and 1 3/4 cups of powdered sugar in a large bowl.
  3. Beat 3 egg whites with 1/4 teaspoon of cream of tartar until soft peaks form.
  4. Add 1/4 cup of granulated sugar gradually, continuing to beat until stiff peaks form.
  5. Combine the dry ingredients into the egg whites gently until well blended.
  6. Pipe small circles onto the prepared baking sheet and let them rest for 30 minutes.
  7. Bake for 15-20 minutes or until the feet have formed, rotating the pan halfway if needed.
  8. Cool the macarons completely on the baking sheet.
  9. Prepare the frosting by mixing 1/2 cup of softened unsalted butter with 2 cups of powdered sugar and 2 tablespoons of milk until creamy.
  10. Fill the macarons with frosting and sandwich them together.

Notes

Store in an airtight container in the fridge for up to a week. Allow to sit at room temperature before serving for best texture.
