Delightful Croatian Peach Cookies filled with apricot jam and dusted with powdered sugar, bringing a touch of nostalgia and sweetness to any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup apricot jam
  • Food coloring (optional, for the peach color)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour and baking powder in a bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Introduce the eggs one at a time, mixing well before adding the next.
  5. Gradually add the flour mixture to the wet ingredients, mixing until combined.
  6. Shape the dough into small balls and flatten them slightly.
  7. Add a dollop of apricot jam in the center of each dough ball.
  8. Bake for 15-20 minutes until golden brown on the bottoms.
  9. Cool completely and optionally add food coloring for a peach hue.
  10. Dust with powdered sugar before serving.

Notes

Store in an airtight container for up to a week or freeze for up to three months. Use parchment paper on baking sheets to avoid sticking.
