A delightful treat featuring crisp outer shells and a smooth caramel filling, inspired by a charming patisserie in Paris.

Ingredients

Scale
  • 1 ¾ cups powdered sugar
  • 1 cup almond flour
  • 4 large egg whites
  • ½ cup granulated sugar
  • ½ cup cocoa powder
  • ½ cup caramel sauce
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Sift together the powdered sugar, almond flour, and cocoa powder.
  3. Whip the egg whites until foamy, then gradually add in the granulated sugar until stiff peaks form.
  4. Fold the dry ingredients into the meringue until well combined.
  5. Pipe small circles onto a baking sheet lined with parchment paper.
  6. Rest the macarons for 30 minutes before baking.
  7. Bake for 15-20 minutes, then let them cool completely.
  8. Create the caramel filling by combining caramel sauce, butter, and vanilla extract until smooth.
  9. Assemble by sandwiching the caramel filling between two macaron shells.

Notes

Ensure your mixing bowls are grease-free for the best meringue. Use room-temperature egg whites for optimal results.
