Delicious Pandan Coconut Madeleines

Charming shell-shaped madeleines infused with pandan juice and shredded coconut for a tropical twist.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup pandan juice
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and grease the madeleine pans.
  2. Whisk together the flour, baking powder, and salt.
  3. Mix the melted butter and sugar until combined.
  4. Add the eggs one at a time, mixing thoroughly after each addition.
  5. Incorporate the vanilla extract and pandan juice to the mixture.
  6. Gradually mix the dry ingredients into the wet ingredients and fold in the shredded coconut.
  7. Fill each madeleine mold about three-quarters full with the batter.
  8. Bake for 10-12 minutes until the edges are golden brown.
  9. Remove from the oven and let cool before serving.

Notes

For added flavor, consider a touch of lemon zest or using almond flour instead of coconut.
