A vibrant and nutrient-packed falafel made with beets and chickpeas, offering a delightful crunch and flavor for any occasion.

Ingredients

  • 2 cups cooked beets, chopped
  • 1 cup canned chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt, to taste
  • Pepper, to taste
  • Juice of 1 lemon
  • Breadcrumbs, as needed for consistency

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Gather all your ingredients and prep them.
  3. Combine beets, chickpeas, parsley, garlic, tahini, cumin, coriander, salt, pepper, and lemon juice in a food processor. Pulse until chunky.
  4. Assess the mixture; add breadcrumbs if too wet.
  5. Shape the mixture into small balls or patties and place on a lined baking sheet.
  6. Bake for 25-30 minutes, flipping halfway.
  7. Serve warm with dipping sauce or in a pita.

Notes

These falafels can be stored in an airtight container in the fridge for up to 3 days. Freeze for later use!
