A Must-Try Garlic Parmesan Chicken and Potatoes

A delightful one-pan meal combining tender chicken breasts, crispy potatoes, and gooey cheese, perfect for comforting weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 45 medium-sized potatoes (Yukon Gold or red potatoes)
  • 3 tablespoons olive oil (or melted butter)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then cut them into small bite-sized cubes.
  3. Toss the potatoes in 1 tablespoon of olive oil, half of the garlic, 1/2 teaspoon of salt, and a pinch of black pepper.
  4. Spread the seasoned potatoes evenly on a baking sheet.
  5. Combine the remaining olive oil (2 tablespoons), garlic, oregano, thyme, paprika, and a pinch of salt and pepper in a small bowl.
  6. Coat each chicken breast with the garlic herb mixture on both sides.
  7. Bake the seasoned potatoes for about 15 minutes.
  8. Add the chicken to the baking sheet and return it to the oven.
  9. Continue baking for an additional 20-25 minutes until the chicken is cooked through.
  10. Remove the baking sheet from the oven, sprinkle Parmesan cheese, and add mozzarella on top of the chicken.
  11. Return to the oven for 3-5 minutes until the cheese is melted and bubbly.
  12. Garnish with fresh parsley and serve with lemon wedges.

Notes

For extra crispy potatoes, try broiling them for the last few minutes.
