Gordon Ramsay’s Irish Lamb Stew

A comforting, hearty Irish lamb stew infused with rich flavors of vegetables and herbs, perfect for cozy nights in.

Ingredients

  • 2 pounds lamb shoulder, cut into cubes
  • 4 tablespoons olive oil
  • 2 onions, chopped
  • 3 carrots, diced
  • 3 parsnips, diced
  • 4 garlic cloves, minced
  • 4 cups beef or lamb stock
  • 2 cups potatoes, diced
  • 2 sprigs of thyme
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb cubes and sear until browned on all sides.
  2. Remove the lamb and set it aside. Add the chopped onions, diced carrots, and diced parsnips to the pot and cook for about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Return the seared lamb to the pot, ensuring all juices are included.
  5. Add the beef or lamb stock, diced potatoes, thyme, bay leaf, tomato paste, Worcestershire sauce, along with salt and pepper. Stir gently.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours.
  7. Before serving, remove the thyme and bay leaf.

Notes

Serve hot with crusty bread or alongside a simple green salad. This stew tastes even better the next day.
