Delightful grilled beef skewers infused with a rich marinade of bone marrow fat, garlic, and fresh herbs.

Ingredients

  • 2 pounds beef sirloin, cut into 1-inch cubes
  • 1/2 cup bone marrow fat, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 wooden skewers, soaked in water

Instructions

  1. Preheat your grill to medium-high heat, preparing for the perfect sear that will lock in those juicy flavors.
  2. Create the marinade by combining the melted bone marrow fat, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper in a bowl.
  3. Marinate the beef cubes by adding them to the marinade and tossing to coat thoroughly. Allow to marinate for at least 30 minutes.
  4. Assemble the skewers by threading the marinated beef cubes onto the soaked wooden skewers, placing them closely together.
  5. Grill the skewers on the grill for 8-10 minutes, turning occasionally for even cooking.
  6. Baste the skewers with any remaining bone marrow fat before serving.

Notes

Soaking skewers prevents them from burning. Use high-quality, grass-fed beef for the best flavor. Don’t rush the marination process for deeper flavors.
