Gruyère and Chive Soufflé

A light and airy soufflé featuring nutty Gruyère cheese and fresh chives, perfect for impressing guests at brunch or dinner.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup grated Gruyère cheese
  • 1/4 cup chopped fresh chives
  • 4 large eggs, separated
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the unsalted butter in a medium saucepan over medium heat.
  3. Stir in the all-purpose flour, cooking for about 1 minute.
  4. Slowly whisk in the milk until the mixture thickens.
  5. Add the salt, black pepper, nutmeg, Gruyère cheese, and chives.
  6. Remove from heat and let it cool slightly before whisking in the egg yolks.
  7. Beat the egg whites with cream of tartar until stiff peaks form.
  8. Fold the beaten egg whites into the cheese mixture gently.
  9. Pour into a greased soufflé dish and bake for 25-30 minutes.
  10. Serve immediately, garnished with additional chives if desired.

Notes

Ensure your mixing bowl is clean and dry before beating the egg whites for maximum volume. Be gentle when folding in the egg whites.
