Delicate French macarons infused with the sweet essence of guava, filled with creamy guava buttercream.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon guava puree
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar (for buttercream)
  • 1/4 cup guava puree (for buttercream)
  • 1 teaspoon vanilla extract

Instructions

  1. Sift and Combine: In a bowl, sift together the almond flour and powdered sugar.
  2. Whisk the Egg Whites: In another bowl, whisk the egg whites and gradually add granulated sugar.
  3. Fold in Dry Ingredients: Gently fold the sifted dry ingredients into the meringue.
  4. Pipe the Circles: Using a piping bag, pipe circles onto parchment paper lined on a baking sheet.
  5. Let Them Rest: Allow the piped macarons to rest at room temperature for about 30 minutes.
  6. Bake the Macarons: Preheat the oven to 300°F (150°C) and bake for 15-20 minutes.
  7. Make the Buttercream: While the macarons cool, beat the softened butter, powdered sugar, guava puree, and vanilla extract until smooth.
  8. Assemble the Macarons: Pipe a generous amount of guava buttercream on half the macarons and sandwich with the other half.

Notes

Store macarons in an airtight container in the refrigerator for up to a week. Enjoy at room temperature.
