A delightful twist on a classic dessert, this Peach Bread Pudding combines the flavors of ripe peaches with creamy custard and fluffy bread.

Ingredients

  • 4 cups cubed bread (day-old or slightly dry, like brioche or French bread)
  • 2 cups canned or fresh peaches, sliced (drained if canned)
  • 4 eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Pinch of salt
  • 2 tablespoons butter (for greasing and dotting on top)
  • 1/2 cup powdered sugar (for optional glaze)
  • 12 tablespoons milk (for optional glaze)
  • 1/4 teaspoon vanilla extract (for optional glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
  2. Layer the cubed bread and peach slices evenly in the prepared dish.
  3. Whisk together the eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, nutmeg, and a pinch of salt in a large bowl until combined.
  4. Pour the custard mixture over the bread and peaches, pressing gently to soak the bread. Allow to sit for 10-15 minutes.
  5. Dot the top with small pieces of butter, then bake for 45-50 minutes until golden brown and set in the center.
  6. Mix the powdered sugar, milk, and vanilla together until smooth for the optional glaze.
  7. Serve warm, optionally topped with glaze, whipped cream, or vanilla ice cream.

Notes

Using day-old bread is key to preventing a soggy pudding. Feel free to experiment with different fruits or add nuts for texture.
