Deliciously vibrant roasted purple potatoes glazed with balsamic vinegar, honey, and garlic, delivering a sweet and tangy experience.

Ingredients

  • 2 pounds purple potatoes, halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the balsamic vinegar, olive oil, honey, minced garlic, salt, and black pepper in a large bowl.
  3. Add the halved purple potatoes to the bowl and toss to coat evenly.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 25-30 minutes, until tender and golden brown.
  6. Remove from the oven and serve warm.
