Ingredients

  • Purple potatoes
  • Olive oil
  • Balsamic vinegar
  • Honey
  • Salt
  • Pepper
  • Fresh herbs (optional, e.g., rosemary or thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the purple potatoes into even-sized pieces.
  3. Toss the potatoes with olive oil, salt, and pepper until well coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast in the oven for about 25-30 minutes, or until tender and golden brown, stirring halfway through.
  6. Create the balsamic glaze by combining balsamic vinegar, honey, and fresh herbs in a small saucepan and heat until it simmers.
