Delightful Tahini Shortbread Cookies with a rich, nutty flavor and a touch of sweetness, perfect for any occasion.

Ingredients

  • 1 cup tahini
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine tahini, powdered sugar, vanilla extract, and salt in a mixing bowl. Mix well until smooth.
  3. Incorporate the flour slowly into the tahini mixture, mixing gently to form a cohesive dough.
  4. Fold in the chopped nuts if using, for added crunch.
  5. Roll the dough into small balls, about the size of a tablespoon, and slightly flatten each ball.
  6. Place the cookies on a baking sheet lined with parchment paper, leaving space between them.
  7. Bake for 12-15 minutes, or until the edges turn golden brown.
  8. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
