A beautiful and wholesome vegetable tian featuring layers of zucchini, yellow squash, and tomatoes, perfect for family gatherings.

Ingredients

  • 2 zucchinis, thinly sliced
  • 2 yellow squashes, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated cheese (e.g., Gruyère or Parmesan)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or basil) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onion and garlic in olive oil over medium heat until soft.
  3. Layer the sliced zucchini, yellow squash, and tomatoes in a baking dish in an alternating pattern.
  4. Pour the sautéed onion and garlic over the vegetables.
  5. Mix the heavy cream, cheese, salt, and pepper in a bowl, then pour the mixture over the layered vegetables.
  6. Bake for 35-40 minutes, or until the vegetables are tender and the top is lightly browned.
  7. Garnish with fresh herbs before serving.

Notes

Use fresh vegetables for the best flavor. This recipe can be prepped ahead of time and stored in the fridge.
