Creamy Asparagus Carbonara

A lightened-up version of classic carbonara, packed with fresh flavors from asparagus and savory turkey bacon, ready in just 25 minutes.

Ingredients

  • 8 oz spaghetti
  • 1 bunch asparagus, trimmed and cut into pieces
  • 4 slices turkey bacon, chopped
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp salt

Instructions

  1. Cook spaghetti according to package instructions. Reserve 1/2 cup of pasta water, then drain.
  2. Heat olive oil in a pan over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  3. Sauté asparagus and garlic in the same pan for 3-4 minutes until tender. Remove from heat.
  4. Whisk together eggs, Parmesan cheese, salt, and pepper in a bowl until well combined.
  5. Return the cooked spaghetti to the pot. Slowly pour in the egg mixture while stirring quickly to prevent scrambling.
  6. Add sautéed asparagus and turkey bacon to the pot, along with reserved pasta water as needed to create a creamy sauce.
  7. Serve the carbonara hot, garnished with extra Parmesan cheese, if desired.

Notes

Timing is key to ensure the eggs cook gently. Use fresh ingredients for the best flavor.
