Creamy Chipotle Shrimp Pasta

A delicious bowl of pasta drenched in a creamy chipotle sauce with succulent shrimp and a kick of spice.

Ingredients

  • 8 oz pasta, cooked al dente
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp chipotle peppers in adobo, finely chopped
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil the Pasta: Cook the pasta according to package instructions. Once al dente, drain and set it aside.
  2. Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp, cooking for about 2 minutes on each side until they turn pink. Remove from skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Create the Dreamy Sauce: Pour in the heavy cream, followed by chipotle peppers, paprika, salt, and black pepper. Stir and let simmer for about 3 minutes.
  5. Bring Back the Shrimp: Return the shrimp to the skillet, stirring to coat them in the sauce.
  6. Combine with Pasta: Add the cooked pasta and Parmesan cheese into the skillet. Toss gently.
  7. Garnish Delightfully: Garnish with fresh parsley before serving.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
