Creamy Parmesan Chicken Soup

A warm and comforting bowl of creamy Parmesan chicken soup, perfect for chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the shredded chicken and chicken broth, bringing it to a simmer.
  5. Once simmering, stir in the heavy cream and Parmesan cheese until melted and smooth.
  6. Add Italian seasoning, salt, and pepper to taste.
  7. If using, stir in the spinach until wilted, just a minute or two.
  8. Serve warm in bowls, and enjoy this comforting dish with a smile!

Notes

For best results, use freshly grated Parmesan. This soup pairs wonderfully with crusty bread or a light salad.
