Creamy Shrimp Alfredo Rigatoni Bake

A comforting and creamy shrimp alfredo bake that brings family together, perfect for weeknight dinners and special occasions.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz rigatoni pasta
  • 2 cups Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  5. Season with salt, black pepper, and red pepper flakes if using.
  6. In a large bowl, combine the cooked rigatoni, Alfredo sauce, and shrimp. Mix well.
  7. Transfer the mixture to a baking dish. Top with mozzarella and Parmesan cheeses.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

For added flavor, you can substitute shrimp with chicken or mushrooms. Use fresh parsley for a refreshing contrast.
