Irresistible Mini Valentine’s Day Cheesecake Bites

Delightful bite-sized cheesecakes topped with strawberry jam and fresh strawberries, perfect for Valentine’s Day or any sweet occasion.

Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup strawberry jam
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and line a mini muffin tin with paper liners.
  2. Combine graham cracker crumbs and melted butter until they resemble wet sand, then press into each paper liner.
  3. Beat the softened cream cheese and sugar together until smooth. Add eggs one at a time, and then stir in vanilla extract and sour cream.
  4. Spoon the filling over each crust and bake for about 15 minutes. Allow to cool and chill for at least 2 hours before serving with strawberry jam and fresh strawberries.

Notes

Make sure the cream cheese is at room temperature for the smoothest batter. You can substitute sour cream with Greek yogurt for a tangier flavor.
