A comforting bowl of homemade chicken soup, rich in flavor and nostalgia, perfect for chilly days.

Ingredients

  • 1 whole chicken (34 lbs), cut into pieces
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Chicken: Place chicken pieces in a large pot. Add 8 cups of water and bring to a boil over high heat.
  2. Skim and Season the Broth: Skim off any foam that rises to the surface. Then add in the carrots, celery, onion, garlic, salt, pepper, and bay leaves.
  3. Simmer and Final Touches: Reduce the heat and allow to simmer for about 60 minutes. Remove chicken pieces, shred the meat, and return it to the pot. Discard the bay leaves and stir in fresh parsley just before serving.

Notes

This soup is versatile! Feel free to add extra vegetables or herbs to suit your taste.
