15 Irresistible Mini Classic Cheesecake Bites

Delightful mini cheesecake bites that capture the creamy flavor of classic cheesecake without the fuss.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C), setting the stage for your cheesecake bites.
  2. Combine 1 1/2 cups of graham cracker crumbs with 1/4 cup of melted butter in a mixing bowl. Mix until the crumbs are evenly moistened.
  3. Press the graham cracker mixture into the bottoms of each mini muffin tin to create a crust.
  4. Beat 16 oz of softened cream cheese with 1/2 cup of sugar until smooth and creamy.
  5. Add 2 eggs and 1 tsp of vanilla extract into the cream cheese mixture and mix until just combined.
  6. Pour the filling over the prepared crusts in your mini muffin tin, filling each one to about three-quarters full.
  7. Bake your cheesecake bites in the preheated oven for 15-20 minutes, or until the centers are set.
  8. Cool in the tins for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve with whipped cream and strawberries or chocolate sauce. Store leftovers in an airtight container for up to 5 days.
