Juicy Shrimp and Lemon Garlic Couscous Pasta

A vibrant dish of juicy shrimp sautéed in garlic and lemon, served over fluffy couscous pasta in just 30 minutes.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup couscous pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the couscous pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for 1 minute until fragrant and golden.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
  5. Stir in lemon juice, zest, salt, and pepper. Cook for another minute.
  6. Toss the cooked couscous with the shrimp mixture.
  7. Garnish with fresh parsley before serving.

Notes

Serve with a green salad and a chilled glass of white wine for a complete meal.
