35-Minute Cozy Homemade Chicken Noodle Bliss That Heals

A quick and comforting chicken noodle soup that brings warmth and joy to chilly days.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 8 cups low-sodium chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, chopped carrots, and celery. Sauté for 5 minutes until softened.
  2. Add the minced garlic, dried thyme, and dried parsley. Cook for 1 minute until fragrant.
  3. Pour in the low-sodium chicken broth and bring it to a boil.
  4. Add the boneless chicken breasts to the boiling broth. Reduce the heat and let it simmer for 15-20 minutes.
  5. Remove the chicken from the pot, cool, then shred it with two forks.
  6. Add the egg noodles and cook for an additional 7-10 minutes until tender.
  7. Season with salt and pepper to taste before serving.

Notes

Serve with crusty bread or a light salad for a complete meal. Stores well for up to 3 days in the refrigerator.
