Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 lemon, juiced
  • 1/4 cup fresh basil, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add garlic, onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften and the aroma fills your kitchen.
  3. Cook the diced chicken breast until it’s no longer pink.
  4. Pour in the chicken broth and bring it to a boil.
  5. Reduce heat and let it simmer for 20 minutes. This is where the flavors meld together beautifully!
  6. Add lemon juice, chopped basil, salt, pepper, and turmeric. Stir gently and let it simmer for another 5 minutes before serving, allowing those fresh herbs to shine.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
