A delightful salad featuring sweet strawberries, creamy feta, and crunchy pecans, perfect for warm weather.

Ingredients

  • 6 cups baby spinach (180 grams)
  • 1 1/2 cups strawberries, sliced (225 grams)
  • 1/2 cup crumbled feta cheese (75 grams)
  • 1/2 cup pecans, toasted (60 grams)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 4 to 5 minutes and let them cool.
  2. Prepare the spinach by adding it to a large mixing bowl.
  3. Add the sliced strawberries to the spinach and gently toss.
  4. Crumble feta cheese over the salad.
  5. Sprinkle the cooled pecans on top.
  6. Slice the red onion and add it to the bowl.
  7. Whisk together the dressing ingredients in a small bowl until smooth.
  8. Dress the salad with the dressing and toss gently.
  9. Serve immediately for the best texture and flavor.

Notes

Store remaining components separately for up to two days. Try goat cheese or blue cheese as feta substitutes.
