Delightful red velvet cookies with a rich, creamy cheesecake surprise inside, perfect for celebrations or just because.

Ingredients

  • 2 ½ cups all-purpose flour
  • â…“ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • Âľ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a large bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the egg, vanilla extract, and red food coloring to the butter-sugar mixture.
  5. Combine the dry ingredients with the wet mixture until just mixed.
  6. Beat the cream cheese and powdered sugar in a separate bowl until smooth.
  7. Shape the cookie dough into small balls and flatten each slightly, creating a small indent.
  8. Assemble the cheesecake filling in the center, fold the edges, and ensure it’s sealed.
  9. Bake the cookies for 10-12 minutes until slightly puffed and cracked.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
