A light and flavorful pasta dish featuring fresh shrimp, tender asparagus, and a zesty lemon sauce, perfect for a springtime meal.

Ingredients

  • 8 oz pasta (e.g., fettuccine or spaghetti)
  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Sauté the garlic in olive oil over medium heat for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
  4. Cook the asparagus in the skillet for another 3-4 minutes until tender.
  5. Incorporate the lemon zest and juice, along with the cooked pasta. Season with salt and pepper to taste.
  6. Toss everything together until well combined.
  7. Serve warm, garnished with fresh parsley.

Notes

Don’t overcook the shrimp to keep them juicy and tender. Adjust lemon juice and seasoning to taste.
