A light and refreshing salad with fresh baby spinach, strawberries, and a tangy balsamic vinaigrette, perfect for summer.

Ingredients

  • 6 cups fresh baby spinach (about 180 grams)
  • 1 1/2 cups fresh strawberries, sliced (225 grams)
  • 1/4 cup thinly sliced red onion
  • 1/3 cup sliced almonds, toasted
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the spinach thoroughly and dry completely using a salad spinner.
  2. Hull the strawberries and slice evenly.
  3. Combine spinach, strawberries, red onion, and toasted almonds in a large mixing bowl.
  4. Whisk balsamic vinegar, honey, and Dijon mustard in a separate bowl.
  5. Slowly stream in the olive oil while whisking to emulsify the dressing.
  6. Add salt and pepper, whisking again.
  7. Pour dressing over salad just before serving and toss gently.
  8. Serve immediately and enjoy!

Notes

Best enjoyed fresh; store components separately in the fridge.
