  • 3 large carrots, sliced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Seasonings (like thyme, rosemary, or parsley) to taste

Instructions

  1. Sauté the aromatics: In a large pot, melt the butter over medium heat and sauté the onion until translucent.
  2. Add the vegetables: Add the diced potatoes and sliced carrots to the pot. Toss them with the onions.
  3. Pour in the broth: Pour in the vegetable broth and bring the mixture to a boil.
  4. Simmer to perfection: Reduce the heat and let the soup simmer until the vegetables are tender, about 20 minutes.
  5. Stir in creaminess: Stir in the milk and season with salt, pepper, and herbs.
