Better Than Starbucks Egg Bites

These egg bites are easy to whip up and packed with flavor and nutrition, perfect for a quick breakfast or leisurely brunch.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced veggies (bell peppers, spinach, or mushrooms)
  • Salt and pepper to taste
  • Optional seasonings (like garlic powder or paprika)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Blend the eggs and cottage cheese in a blender until smooth.
  3. Stir in the shredded cheese, diced veggies, salt, pepper, and any additional seasonings.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  6. Let them cool for a few minutes before removing them from the tin.

Notes

Serve with fresh fruit or a slice of whole-grain toast. These egg bites store beautifully in the refrigerator for up to 4 days or can be frozen for up to a month.
