Black Pepper Chicken with Mushrooms

A quick and delicious black pepper chicken dish with earthy mushrooms and colorful bell peppers, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon black pepper
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 bell pepper, sliced
  • 3 green onions, chopped
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for 30 seconds until fragrant and golden.
  3. Add the sliced chicken breast and cook until no longer pink, about 5-7 minutes, stirring occasionally for even cooking.
  4. Stir in the mushrooms and bell pepper, and cook until softened, about 3-4 minutes.
  5. Add the soy sauce and black pepper; stir well to combine and cook for an additional 2-3 minutes.
  6. Serve hot over steamed rice or noodles, garnished with fresh green onions.

Notes

For added flavor, customize with vegetables like snap peas or carrots. Adjust black pepper to taste for desired spiciness.
