  • 2 cups chicken or beef broth

  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Sear the lamb shanks on all sides until browned in a large Dutch oven.
  3. Sauté the chopped onions and minced garlic until softened.
  4. Deglaze the pot with red wine, scraping the bottom to release flavors.
  5. Combine the broth, olives, oregano, rosemary, salt, and pepper.
  6. Immense the lamb shanks in the sauce, ensuring they’re partially submerged.
  7. Braise in the oven for about 2 to 2.5 hours until tender.
  8. Serve garnished with fresh parsley and enjoy!
