Crispy Roasted Cauliflower Tacos

Transform humble cauliflower into delicious, spicy tacos with a refreshing cilantro lime crema.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Corn tortillas
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/2 cup sour cream or Greek yogurt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, cumin, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower florets on a baking sheet in a single layer. Roast for 25-30 minutes, stirring halfway through.
  4. Combine the chopped cilantro, lime juice, and sour cream or Greek yogurt to make the cilantro lime crema.
  5. Warm corn tortillas in a skillet or microwave until pliable.
  6. Assemble the tacos by placing the crispy roasted cauliflower on each tortilla and drizzling with the crema.
  7. Serve immediately while warm.

Notes

For a spicy kick, consider adding chopped jalapeños or hot sauce. You can also use coconut yogurt for a vegan option.
