  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup chocolate ganache, for topping

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine the chocolate cookie crumbs, sugar, and melted butter. Press this mixture into the bottom of a springform pan to form a sturdy crust. Bake for 10 minutes until crisp and set.
  2. In a large mixing bowl, beat the softened cream cheese until it achieves a smooth texture. Next, blend in the creamy peanut butter, powdered sugar, and vanilla extract, mixing until all ingredients are well combined and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until you see no streaks.
  4. Pour the silky peanut butter filling over the baked crust, smoothing out the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or until it has set firmly.
  5. Once set, gently pour the chocolate ganache over the top and spread it evenly.
  6. Chill for an additional hour before serving, then slice generously and enjoy!
