A vibrant and crunchy chopped salad bursting with fresh ingredients, perfect for any occasion.

Ingredients

  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh herbs (parsley, cilantro, or basil)
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Veggies: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and fresh herbs.
  2. Add Cheese (If Desired): If using, add the crumbled feta cheese to the bowl.
  3. Whisk the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. Combine Everything: Pour the dressing over the salad and toss to combine until evenly coated.
  5. Serve or Chill: Serve immediately or chill in the refrigerator before serving.
