Classic Beef Stew

A hearty classic beef stew filled with tender beef and flavorful vegetables, perfect for cozy nights.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Brown the beef chunks on all sides for about 5-7 minutes. Once browned, remove the beef and set aside.
  2. Add the chopped onion and garlic to the same pot. Sauté until the onion is softened and translucent, about 3-5 minutes.
  3. Return the beef to the pot, adding in the sliced carrots and diced potatoes. Stir everything together.
  4. Pour in the beef broth and sprinkle the thyme, adding the bay leaf along with salt and pepper. Stir to combine.
  5. Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours.
  6. If desired, dissolve the flour in water and stir it into the stew during the last 30 minutes of cooking.
  7. Remove the bay leaf before serving and enjoy your hearty stew warm.

Notes

Serve with crusty bread or on mashed potatoes. Can add red wine for flavor.
