Cranberry Orange Muffins

Delightful muffins combining tart cranberries and fragrant orange zest, perfect for breakfast or a snack.

Ingredients

  • 1 cup fresh cranberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 orange

Instructions

  1. Preheat the oven and prepare the muffin tin. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine dry ingredients. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Whisk the wet ingredients. In another bowl, whisk together the egg, orange juice, vegetable oil, and orange zest until fully combined.
  4. Combine wet and dry ingredients. Gently combine the wet ingredients with the dry ingredients, mixing until just combined.
  5. Fold in the cranberries, making sure they’re evenly distributed throughout the batter.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days. Freeze individually wrapped for longer storage.
