Creamy Mushroom & Asparagus Chicken Penne

A warm, hearty pasta dish combining tender chicken, earthy mushrooms, and vibrant asparagus in a luscious cream sauce.

Ingredients

  • 2 chicken breasts, diced
  • 8 ounces penne pasta
  • 1 cup fresh asparagus, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the pasta according to package instructions; drain and set aside.
  2. Sear the chicken in a large skillet with olive oil over medium heat until browned and cooked through.
  3. SautƩ garlic, asparagus, and mushrooms in the skillet until tender.
  4. Simmer the heavy cream and stir in Parmesan cheese; cook until the sauce thickens slightly.
  5. Combine the cooked penne pasta, tossing to coat with the sauce. Season with salt and pepper.
  6. Garnish and serve hot with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently by adding a splash of cream or water.
