A luxurious yet easy pasta sauce featuring roasted garlic, lemon, and Parmesan cheese, perfect for any occasion.

Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Pasta of choice (e.g., spaghetti, fettuccine)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft.
  2. While the garlic roasts, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a saucepan, squeeze out the roasted garlic from its skins and combine it with heavy cream, lemon juice, and zest. Cook over medium heat until warmed through.
  4. Stir in the Parmesan cheese until melted and smooth. Season generously with salt and pepper to taste.
  5. Toss the cooked pasta with the luscious sauce, ensuring every strand is coated in that creamy goodness.
  6. Serve warm in bowls, garnished with fresh parsley for a pop of color and flavor.

Notes

For a lighter option, replace heavy cream with half-and-half or Greek yogurt. Adjust seasoning to taste.
