Easy Creamy Spinach and Mushroom Lasagna

A comforting lasagna with creamy ricotta and mozzarella, earthy mushrooms, and vibrant spinach, perfect for any occasion.

Ingredients

  • Lasagna noodles
  • Ricotta cheese
  • Mozzarella cheese, shredded
  • Spinach, fresh
  • Mushrooms, sliced
  • Garlic, minced
  • Onion, chopped
  • Parmesan cheese, grated
  • Olive oil
  • Salt
  • Black pepper
  • Italian seasoning
  • Marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions, then drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  4. Add sliced mushrooms to the skillet and cook until tender.
  5. Stir in the fresh spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
  6. In a baking dish, spread a layer of marinara sauce, then place a layer of noodles, followed by a layer of the spinach and mushroom mixture, a layer of ricotta cheese, and a layer of mozzarella cheese. Repeat the layers until all ingredients are used, finishing with mozzarella and parmesan on top.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden.
  9. Once done, let the lasagna cool for a few minutes before slicing and serving.

Notes

Ensure noodles are al dente as they will continue cooking in the oven. Feel free to swap spinach with other veggies for variations.
