A delightful combination of crispy fried chicken served atop fluffy waffles, drizzled with maple syrup.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1 cup cornmeal
  • 4 pieces chicken (drumsticks or thighs)
  • 2 cups vegetable oil (for frying)
  • Maple syrup (for drizzling)
  • Butter (optional, for serving)

Instructions

  1. Whisking the dry ingredients: In a bowl, mix together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt.
  2. Mixing the wet ingredients: In another bowl, whisk together 1 cup of buttermilk and 2 large eggs until well-combined.
  3. Combining the mixtures: Pour the wet ingredients into the bowl of dry ingredients and blend until just combined. Gently fold in 1 cup of cornmeal.
  4. Heating the oil: In a large skillet, heat 2 cups of vegetable oil over medium-high heat until shimmering.
  5. Frying the chicken: Dip each piece of chicken into the batter, then fry in the hot oil until golden brown, about 8-10 minutes per side.
  6. Preparing the waffles: Cook your waffles according to your waffle maker’s instructions and keep them warm.
  7. Final assembly: Place a piece of chicken on top of a waffle, drizzle with maple syrup, and add butter if desired.

Notes

For ultra-crispy chicken, let it rest on a wire rack after frying to keep it from becoming soggy. Experiment with spices for extra flavor.
