A simple and delicious Eggless Banana Bread recipe, perfect for using overripe bananas.

Ingredients

  • 3 overripe bananas
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat the oven and prepare your pan by greasing a loaf pan.
  2. Mash the overripe bananas in a mixing bowl until smooth.
  3. Combine the melted butter with the mashed bananas, stirring in the sugar and vanilla extract.
  4. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
  5. Fold the dry ingredients into the banana mixture until just combined.
  6. Transfer the batter to the greased loaf pan, smoothing the top.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. Freeze wrapped tightly for up to 3 months.
