A vibrant and flavorful Chicken Fajita Rice dish that brings the family together with smoky, tangy flavors and fresh vegetables.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 bell peppers, sliced (mix of colors if you like)
  • 1 onion, sliced
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat, allowing it to shimmer.
  2. Add the sliced chicken to the skillet. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the sliced bell peppers and onion. Sauté for another 4-5 minutes until tender.
  4. Sprinkle the fajita seasoning over the chicken and veggies, mixing until well-coated.
  5. Add the cooked rice, stirring together until well combined.
  6. Let the mixture cook for another 2-3 minutes. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh cilantro if desired.

Notes

Feel free to customize with different vegetables or substitute the chicken for shrimp or tofu.
