Greek-Inspired Lemon Chicken Orzo Soup

A comforting soup combining juicy chicken, tender orzo, and vibrant greens with a refreshing lemon zing.

Ingredients

  • 1 lb chicken breast
  • 1 cup orzo pasta
  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups spinach or kale
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley, dill, etc.)

Instructions

  1. Sauté the vegetables: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add garlic: Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breast and orzo pasta. Reduce heat and simmer for 10-12 minutes until chicken is cooked through and orzo is tender.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the spinach, lemon juice, dried oregano, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs.

Notes

Pair with crusty bread or a side salad. For added flavor, use crumbled feta or tzatziki.
