Ingredients

  • Shrimp
  • Rice or Quinoa
  • Crisp Vegetables (like bell peppers, cucumbers, or tomatoes)
  • Briny Olives
  • Creamy Feta Cheese
  • Lemon Juice
  • Olive Oil
  • Garlic
  • Salt
  • Pepper

Instructions

  1. Cook the grains according to package instructions and set aside.
  2. Whisk together lemon juice, olive oil, minced garlic, salt, and pepper to create the dressing.
  3. Sauté the shrimp in a pan over medium heat until cooked through, about 2-3 minutes per side.
  4. Assemble the bowls by layering rice or quinoa, topped with shrimp, chopped vegetables, olives, and crumbled feta.

Notes
