A hearty and comforting stew made with tender beef chunks, fresh vegetables, and the rich flavor of Guinness stout.

Ingredients

Scale
  • 2 lbs beef chuck, cut into chunks
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness stout
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 cups potatoes, diced

Instructions

  1. Heat the pot: In a large pot, heat the vegetable oil over medium heat. Add the beef chunks and brown them on all sides, sealing in the flavors.
  2. Sauté the vegetables: Add the chopped onions, carrots, celery, and garlic to the pot and sauté until the vegetables begin to soften.
  3. Stir in the tomato paste: Stir in the tomato paste, then pour in the Guinness stout and beef broth, mixing well.
  4. Add the thyme, bay leaves, salt, and pepper: Bring the mixture to a boil, letting the ingredients come alive.
  5. Simmer to perfection: Reduce the heat and let it simmer for about 90-120 minutes, or until the beef becomes tender.
  6. Add the potatoes: In the last 30 minutes of cooking, add the diced potatoes.
  7. Taste and adjust: Taste the stew and adjust the seasoning if necessary.
  8. Serve with love: Serve hot with crusty bread.
