A delightful Italian cake with creamy ricotta and chocolate chips, perfect for any occasion.

  • 1 cup ricotta cheese
  • 1/2 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Mix ricotta cheese and sugar, mixing until smooth in a large bowl.
  3. Add eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. Combine flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  5. Fold in the chocolate chips, ensuring they’re evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and spread it evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool before dusting with powdered sugar and serving.

Notes

For a citrus twist, consider adding a hint of orange zest or substituting half of the chocolate chips with dried fruits or nuts.
