A low-carb delight that captures all the joy of dessert in a healthier twist on classic roll-ups, featuring cream cheese and blueberries surrounded by a crispy almond flour layer.

Ingredients

  • 4 oz cream cheese
  • 1 cup blueberries
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup erythritol or other low-carb sweetener
  • 2 tbsp butter
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cream cheese, blueberries, erythritol, and vanilla extract in a mixing bowl.
  3. Whisk together almond flour, eggs, and salt in another bowl.
  4. Spread the batter into a thin layer on a lined baking sheet. Bake for about 10-15 minutes until golden.
  5. Spread the blueberry cream cheese mixture over the cooled almond layer and roll it up tightly.
  6. Slice the roll into bite-sized pieces and serve on a platter.

Notes

For a low-carb chocolate drizzle, add it on top before serving. Can substitute cream cheese with dairy-free alternatives and use flaxseed meal instead of eggs for vegan options.
